Maris Otter is a heritage two-row barley variety, floor-malted by a handful of small UK maltsters. It’s slower-growing and lower-yielding than modern varieties, which is why it costs more, but the depth of malt character it produces is the reason it has stayed on every British brewer’s shelf for fifty years.
When to use it
Anywhere you want a malt-forward British or American ale: bitters, milds, porters, ESBs, pale ales. It’s also a forgiving base for first-time all-grain brewers because of its high diastatic power — there’s enzymatic headroom for a less-than-perfect mash.
