Weyermann’s Pilsner malt is so finely modified that it works well in single-infusion mashes, but it still has the colour and clean flavour profile you’d expect from a malt designed for traditional German step mashes. Expect very pale wort, mild grassy/sweet malt character, and a clean fermentation finish.
When to use it
- Bohemian and German Pilsners as the entire grist
- Belgian ales (witbier, tripel, saison) where you want low colour and don’t want toasty character
- As 100% base in pale Continental-style hybrids
Notes on water
Pilsner malt’s low colour and mild flavour expose your water profile. If your tap water is hard, you’ll want to dilute with reverse-osmosis or distilled water; chloride above ~50 ppm can drag a Pilsner toward sweetness. See our water chemistry intro for the practical version.
